i started off today with such a good run and it was so great that i'm running again! i've drunk green tea and ran today...i would say it's a good day!
today, the cupcakes are for a birthday party! i think i have a serious love for red velvet. they make everyone think it's a holiday, even if we're not celebrating anything important at all!
Red Velvet Cupcakes
2 1/2 cups all-purpose flour
1 1/2 cups sugar
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cocoa powder
1 1/2 cups vegetable oil
1 cup buttermilk, room temperature
2 large eggs, room temperature
2 tablespoons red food coloring
1 teaspoon white distilled vinegar
1 teaspoon vanilla extract
Preheat the oven to 350 degrees F.
In a medium mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. In a large bowl gently beat together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla with a handheld electric mixer. Add the sifted dry ingredients to the wet and mix until smooth and thoroughly combined.
Divide the batter evenly among the cupcake tins about 2/3 filled. Bake in oven for about 20 to 22 minutes, turning the pans once, half way through. Test the cupcakes with a toothpick for doneness. Remove from oven and cool completely before frosting.
Cream Cheese Frosting
8 ounces cream cheese, room temperature
8 tablespoons (1 stick) unsalted butter, cut into pieces, room temperature
1 cup confectioners' sugar
1 teaspoon pure vanilla extract
Beat butter and cream cheese until fluffy. Slowly add in sugar. Add in vanilla.

I never tried red velvet cake until a couple of years ago. I wept for all those lost years afterward. Since cream cheese goes so beautifully with red velvet, you should try making a red velvet cake with a layer of cheesecake between the layers (and frosted with cream cheese frosting, of course). Heaven on earth.
